But what is the difference with our Oeil-de-Perdrix then?
It’s very simple: the skin maceration time is shorter on L’Estival!
The vinification method remains the same: in fact, if the Pinot Noir musts macerate with the grape skins for around 12 hours to give an Oeil-de-Perdrix with a salmon pink color, the Estival only remains in contact with the skins for 4 hours, giving it a very light pink color… a light rosé wine!
And the aromas are also very different: L’Estival is more aromatic, more floral than its “brother” and therefore lighter and easier to drink.
L’Estival is the new rosé wine that represents our desire to innovate and take on a new challenge… because although it is light, it is no less difficult to vinify due to its lightness and its complex aromatic structure.
Coming from the vines of the place called “Le Champ du Four” in Auvernier – Neuchâtel, we have expressly raised this wine towards a fresh and airy style.
